Mouth Watering Cuisine Of Uttar Pradesh

The food of Uttar Pradesh is just as different as the colours of a rainbow. From every day classics like sabziyon ki tehari to a princely lakhnavi spread, this diverse state nestles the most mouth watering recipes in its lap. Amazingly tasty fast food like chaat, samosa and pakora, that is on the top the most popular street food charts in all of India, are native to this state. State cuisines from Uttar Pradesh have absorbed and adapted a variety of dishes to create an entire menu of authentic recipes.
Uttar Pradesh is famous for its royally delicious Nawabi food. Cooking techniques in Uttar Pradesh were greatly influenced by Mughal’s but the cuisine of northern Uttar Pradesh is very different from the classic Mughlai food of Delhi. The Nawabs of Oudh were great foodies and  always encouraged their master chefs to invent new cooking styles. The famous recipes of Lucknow are ‘tunda kebabs’ and ‘kakori kebabs’ flavored with rich spices and seeds and is popular in the whole country as well as in the the world. The main genre of Uttar Pradesh cuisine is Awadhi, and the cooking patterns of the state are similar to those of the rest of Northern India. The Awadhi cuisine of Uttar Pradesh bears similarities to those of Kashmir and Punjab. But at the same time it is totally different from entire north India. The taste and the usage of spices is different from any place in India.

1.  Mutton Kofta

This can be the winner of anyone’s heart. It can be served dried as kebabs or with a thick gravy which goes well with Basmati rice or pulao. Nothing can beat this special awadhi flavor. 


2.  Kakori Kebab

A famous lucknavi recipe with a lot of ‘tahzeeb’ is passing down through generations. It derives its name from the city of Kakori on the outskirts of Lucknow. It is made with the finest meat of the lamb and a few spices. If you are a true food lover, trust me you will not be able to say ‘no’ to this amazing kebab.


3. Bhindi ka Salan

This recipe was a part of mughlai kitchen. The famous ‘Mirch ka Salan’ was famous and some chefs did an experiment to it, and uses lady fingers instead. Crispy fried bhindi dipped in a zingy yogurt based gravy with a melange of spices. It can be a dream recipe of any fooy person to have. 


4.  Aloo Rasedaar

5. Keema Dum
